Bramble pudding

You can use frozen brambles or other fruits, e.g. blueberries, red or black currants etc.

Steps
Warm the brambles in the lemon juice for 10 minutes or so at low heat.
Allow to cool and sieve into a bowl.
Stir the gelatin over a hot water bath until dissolved.
Mix the gelatin into the brambles.
When it begins to solidify, gradually mix in the cream followed by the egg white.
Fill into a bowl or individual portions and chill for 2 hours in the fridge.

500 g brambles
150 g sugar
Juice from half a lemon
8 g powder gelatin, soaked in 2 tablespoons of cold water
1/4 L whipped cream
2 whipped egg whites
